  3. 1/2 pound salted codfish

  4. 2 cups flour

  5. 2 onions

  6. 2 plum tomatoes

  7. 2 stalks scallions

  8. 1/2 tsp thyme

  9. pepper to taste

  10. 1 jalapeno or habanero pepper

  11. 2 teaspoons baking powder

  12. 1/2 cup to 1 cup water

  13. oil for frying Soak codfish, preferably overnight. Drain, rinse under cold water,

  14. flake the fish, making sure to remove fish bones. Chop tomatoes,

  15. onion, scallion, and jalapeno, if used. Add these and the codfish

  16. to the flour, thyme, pepper, and baking powder, and mix. Add enough

  17. water to make a batter that coats the spoon to a depth of about 1/4 inch, not too thick, not extremely thin. Fry by teaspoons in

  18. about 1/2-inch of oil or deep fat until golden brown. Drain on

  19. absorbent paper. These are best hot, but can be served at room

  20. temperature.
