  1. 2 dungeness crabs(2 kg), remove the shells and cut into pieces, toss lightly with tapioca flour, then deep fry. Remove brain from shells and leave aside for the sauce

  2. (A):

  3. 2 tbsp chopped ginger

  4. 2 tbsp chopped shallots

  5. 2 tbsp chopped garlic

  6. 2 tbsp chilli black bean paste

  7. Seasoning:

  8. 2 tbsp chilli sauce

  9. 2 tbsp orange marmalade or apricot jam

  10. 2 tbsp worcestershire sauce

  11. 2 tbsp hua tiau(chinese wine)

  12. 2 tbsp sugar to taste

  13. Salt to taste

  14. A dash of pepper

  15. 1/2 cup water

  1. Saute ingredients (A) in two to three tbsp oil until aromatic.

  2. Mix in seasoning and the brain of crabs, bring to a boil(sauce should thicken).

  3. Add the crab pieces and stir-fry well. Then allow to simmer till sauce is slightly thick.

  4. Serve with garnishing.

  5. Serves
