  1. Moroccan Roasted Lamb

  2. 2 T ground coriander seeds

  3. 4 cloves garlic, peeled and crushed

  4. 1 1/2 ts ground cumin

  5. 1 1/2 ts paprika

  6. 2 ts black pepper

  7. 1 ts salt

  8. 1/4 c olive oil

  9. 1 to 5 lb leg of lamb

  10. Garnish:

  11. 1 T ground cumin mixed w/

  12. 1 T salt

  13. Mix all the ingredients except the garnish and rub on the leg of

  14. lamb. Let sit 10 minutes. Roast the lamb according to the instructions

  15. listed below. Allow it to sit a few minutes before slicing. Place

  16. the cumin and salt garnish in a small dish and let each person

  17. sprinkle a bit on their sliced lamb.

  18. For Rare Lamb:

  19. Have the lamb at room temperature. Heat the oven to 400F. Insert

  20. a meat thermometer in the thickest part of the leg, being careful

  21. not to touch the bone. Place in a pan with a roasting rack and 400F for 40 minutes, so the meat can brown. Turn down

  22. 325F and roast for an additional

  23. 40 to 50 minutes, or until the thermometer registers 140F.

  24. For Medium Lamb:

  25. Follow the above instructions but cook a bit longer so that the

  26. 145F -
