  1. 1 box frozen, defosted broccoli cuts..without stems drained well

  2. 1 can cream of mushroom or onion soup..low salt ..undiluted

  3. 2 eggs beaten or 1/2 cup egg substitute

  4. 1 cup low fat mayo

  5. 1/4 cup freeze dried onions

  6. 1/2 cup parmesan cheese, grated

  7. 1 1/4 cups sharp cheddar cheese

  8. 2 cups cooked elbow macaroni

  9. 3/4 cup chopped/cubed leftover baked ham

  1. Preheat oven to 350 degrees. Prepare casserole dish by spraying it with Pam. Mix all ingredients together except macaroni, ham and 1/4 cup sharp cheddar. When throughly mixed fold in ham and macaroni. Place in preheated oven and bake for 45 minutes. Just before serving sprinkle 1/4 cup cheese on top and place back in oven to melt. Serves 6-8 Can be prepared ahead and kept in frig until ready to bake. Can also be made ahead and frozen. Best when defrosted in refrigerator before baking. Can be vegetarian if ham is left out.
