  2. 1/2 Recipe basic bread dough

  3. - that has risen once

  5. Oil and cornmeal for pan

  7. 2 tb Light-tasting olive oil

  8. 4 oz Chorizo; (See NOTE)

  9. - OR - Other spicy sausage

  10. 1 lg Clove garlic; minced

  11. 1 md Spanish onion

  12. - cut into small dice 3/4 c Shredded Monterey Jack

  13. 3/4 c Shredded Muenster cheese

  14. 3 tb Minced cilantro

  15. 2 Green onions; thinly sliced

  16. Salsa; (well drained)

  17. Cilantro leaves

  1. PREHEAT OVEN TO 425F with rack in lower area of oven.

  2. Oil a round pizza pan, preferably black steel; sprinkle lightly with cornmeal.

  3. Set aside.

  4. Roll dough into circle, roughly 11 inches in diameter, letting dough relax a few minutes if it keeps withdrawing.

  5. Place in prepared pan, gently stretching it back to size once it's in the pan.

  6. Prick dough with fork.

  7. Heat oil in 7-inch skillet over medium high heat.

  8. Remove casing from sausage; crumble meat into 1/2-inch chunks.

  9. When oil is hot, add sausage, garlic and onion to pan.

  10. Cook until onion is softened, about 4 minutes, stirring often.

  11. Spread mixture on dough leaving 1/2-inch margin.

  12. Sprinkle 1/2 cheese over.

  13. Bake for 12 minutes.

  14. Sprinkle remaining cheese over.

  15. Bake until this cheese has melted and dough is deeply browned, about 3 minutes more.

  16. Remove from oven.

  17. Sprinkle with minced cilantro and green onions.

  18. Cut into wedges.

  19. Garnish each wedge with drained salsa and cilantro leaves.

  20. Serve hot.

  21. (NOTE: This is available in Mexican markets and specialty food stores, and is a robustly seasoned, coarsely ground fresh pork sausage.
