  1. 4 tablespoons 60ml Butter - (up to 6)

  2. Flour to coat

  3. 1 Pair shad roe

  4. 6 to 8 ounces

  5. 1 teaspoon 5ml Minced ginger

  6. 2 tablespoons 30ml Lemon juice

  7. Salt and freshly ground black pepper

  8. 2 tablespoons 30ml Chopped parsley or chives

  9. Lemon or lime wedges

  1. Melt butter in a skillet. While foaming is subsiding, lightly dredge roe in flour and shake off excess.

  2. Add roe and cook until lightly browned, about 4 minutes.

  3. Turn over, and brown on the other side. Remove the roe to a plate. If necessary add more butter to the skillet.

  4. Add ginger and saute for a moment. Add lemon juice and remove from heat; season with salt and pepper, add parsley or chives and spoon over shad.

  5. Serve with lemon or lime wedges.
