  1. 150g (5 oz) fresh pineapple, finely chopped

  2. 1 red pepper, diced

  3. 1 green pepper, diced

  4. 175g (6 oz) frozen sweetcorn, thawed

  5. 1 (400g) tin black beans, drained and rinsed

  6. 2 spring onions, chopped

  7. 2 green chillies, chopped

  8. 4 tablespoons orange juice

  9. handful chopped fresh coriander

  10. 1/2 teaspoon ground cumin

  11. salt and freshly ground black pepper to taste
