  2. 1 fresh lime juice , chilled

  3. 1 ounce candied ginger , chopped

  4. 3 tablespoons mild olive oil

  5. 1 mango , chilled peeled and pitted-

  6. 1/2 used for dressing and 1/2 used for garnish

  7. 1/2 ounce sweet onion , chopped

  8. mint leaf (to garnish)
