  1. 2 onion s, chopped

  2. 2 tablespoons extra virgin olive oil

  3. 2 garlic cloves, crushed

  4. 3 tomato es, peeled and chopped

  5. 1/2 teaspoon ground ginger

  6. 2 pounds sweet potato es, peeled

  7. 2 to 3 tablespoons chopped cilantro

  8. salt and black pepper

  1. In a large pan, fry the onions in the oil until soft. Add the garlic, and when the aroma rises, add the tomatoes and ginger. Cut the sweet potatoes into 1-inch cubes,and put them in the pan with the cilantro.

  2. Add about 1½ cups water, or enough to half-cover the potatoes, and season with salt and pepper.

  3. Cook, uncovered, for 15 minutes, until the potatoes are tender and the liquid has almost evaporated, turning the potatoes over once.

  4. Serve hot or cold.
