  1. 8 ounce(s) (flake-style ) surimi , imitation crab meat, diced 5 cup(s) (diced) red onion

  2. 1 bunch(es) green onions , sliced 2 stick(s) celery , diced 75 cup(s) mayonnaise

  3. 1/4 cup(s) Dijon mustard

  4. 1 tablespoon(s) (dried) tarragon , crumbled 25 teaspoon(s) (coarsely ground) black pepper

  5. 4 large (ripe) tomatoes

  6. 8 whole(s) (Bibb or Boston) lettuce leaves

  1. Combine first 8 ingredients. Chill for 30 to 60 minutes to allow flavors to blend.

  2. Slice top off each tomato, and scoop out the cores and seeds. Sprinkle lightly with salt. Mound crab salad into tomatoes. Place 2 lettuce leaves on each of 4 plates; top with a tomato. Sprinkle tops with additional tarragon and pepper. Serve with crackers (“I like Keebler Bistro Multigrain crackers,” says Jennifer) and fresh fruit.
