  1. 2 Yellow onions - peeled, and (medium) Coarsely chopped

  2. 2 tablespoons 30ml Bacon drippings, butter, or margarine

  3. 1 Ham hock

  4. 1 lb 454g / 16oz Yellow split peas - washed, sorted

  5. 3 Water

  6. 1/8 teaspoon 0.6ml Rosemary

  7. 1 tablespoon 15ml Salt

  8. 1/4 teaspoon 1 1/3ml Freshly-ground black pepper

  1. Recipe Instructions Stir-fry onions in drippings 5 to 8 minutes in a large saucepan over moderate heat until pale golden. Add ham and stir-fry 5 minutes. Add remaining ingredients, cover, and simmer 1 hour, stirring occasionally. Serve steaming hot with butterychunks of garlic bread. This recipe yields 8 to 10 servings.
