  1. 1 Red onion - sliced thin rings

  2. 1/2 cup 118ml Fresh lime juice

  3. Olive oil - as neded

  4. 2 Ripe plantains - sliced on a bias (large)

  1. Marinate the onion in the lime juice and set aside.

  2. In a frying pan heat up olive oil to a very high temperature, then fry the plantains until they become golden colored on both sides, making sure to turn them several times.

  3. Arrange the fried plantains on a serving platter and top off with marinated onion.
