  1. 200g Plain flour (Sifted)

  2. 150g sugar

  3. 1/2 tsp salt

  4. 2 tsp baking powder

  5. 100ml sunflower oil

  6. 150ml coconutmilk

  7. 1 egg

  8. 25g dessicated coconut & extra to sprinkle

  9. 150 g raspberries fresh or frozen Icing sugar to dredge before serving

  1. Preheat your oven to 200 Degrees Celcius.

  2. Line your muffin tin with paper cases or grease well.

  3. Combine your Dry ingredients -Flour, Baking Powder, Sugar, Salt & Dessicated Coconut In a mixing bowl.

  4. In a seperate bowl of jug Combne your wet ingredients - Oil, Egg, Coconut Milk.

  5. Make a well in the center of your dry ingredients and gradually combine together with your wet ingredients.

  6. When smooth Fold in Raspberries (or whatever your using).

  7. Spooon into prepared tin.

  8. Sprinkle with Dessicated Coconut.

  9. Bake for 20-25mins.

  10. . Dredge with icing Sugar before serving.
