  2. LASAGNA OF GREENS AND LEMON

  6. 1 bn Swiss chard, rinsed,

  7. -trimmed and chopped

  8. 1 bn Mustard greens, rinsed,

  9. -thick stems trimmed and 1 bn Kale, rinsed, trimmed and -chopped

  10. 2 Garlic cloves, minced

  11. Juice of 1 lemon

  12. Salt

  13. Freshly ground pepper

  14. 1/2 lb Brown mushrooms, rinsed,

  15. -trimmed and quartered

  16. 1 lb Ricotta cheese

  17. 1/2 c Fresh goat cheese

  18. Zest of 1 lemon

  19. Fresh Pasta

  20. 1 1/2 c Tomato puree

  21. 1/2 lb Mozzarella, shredded

  22. In large saute pan or wok, stir-fry chard, mustard greens and kale

  23. just with water clinging to leaves after rinsing. After green have

  24. cooked 3-5 minutes, add garlic and cook until all greens are tender,

  25. 10 minutes, stirring frequently to keep from scorching. Add

  26. of lemon juice and stir until all moisture is re-absorbed. Season to

  27. taste with salt and pepper.

  28. Heat non-stick saute pan over high heat. When very hot, add mushrooms

  29. and cook, tossing and stirring constantly, until browned. Add to

  30. greens and allow to cool completely. Mixture should be completely dry.

  31. In large mixing bowl, combine ricotta, goat cheese and lemon zest. Add

  32. remaining 1/2 of lemon juice and stir to combine. When greens are

  33. completely cool, add to cheese mixture and stir well. Season to taste

  34. with salt.

  35. After Fresh Pasta has been made, assemble lasagna. Spread bottom and sides of glass baking pan with 3/4 cup of tomato puree. Cook pasta in

  36. pot of boiling water. Drain. Then lay 1 sheet of pasta in bottom of

  37. pan. It should cover bottom completely. Spread 1/2 of cheese mixture

  38. over pasta sheet. Sprinkle 1/3 of mozzarella over top.

  39. Repeat layering once more, finishing with third sheet of pasta. Spread

  40. remaining tomato puree over top and sprinkle with remaining

  41. 300'F.
