  2. Title: RAISIN SCONES

  5. 2 c Flour

  6. 1/2 ts Salt

  7. 3 ts Baking powder

  8. 2 ts Sugar

  9. 1/4 c Butter; cold

  10. 1/2 c Raisins; soaked in hot water

  11. -for 1/2 hour, drained

  12. 1/2 c Half-and-half; or cream

  13. 1 Egg; beaten

  14. Sift the dry ingredients together. Cut the butter into the dry

  15. ingredients, using a pastry blender. Add the drained raisins to the

  16. flour mixture. Mix the half-and-half with the beaten egg and stir

  17. into the flour mixture. Use a fork, and Do Not overmix. It should

  18. take only a few turns to get a dough.

  19. 3 balls and pat each out into a 1/2-inch-thick

  20. circle. Cut each into 4 triangular scones. Bake on an ungreased

  21. 450 degrees for about 12 minutes, or until golden

  22. brown.

  23. Serve with butter and raspberry jam.
