  2. Rich Expresso Brownie Bars

  7. 3 Oz Unsweetened chocolate --

  9. 2 Oz Semisweet chocolate --

  11. 1/2 C Shortening -- 'Golden' flavour

  12. 2 Eggs

  13. 1 Egg yolk

  14. 1 1/4 C Brown sugar -- firmly packed

  15. 3/4 C Flour, all purpose

  16. 1/4 Ts Baking powder

  17. 1/3 C Pecans -- coarsely chopped

  18. -toasted

  19. --CREAM CHEESE TOPPING--

  20. 12 Oz Cream cheese --

  21. 375 g.

  22. 1 C Icing sugar -- confectioner's

  23. -sifted

  24. 2 T Coffee, instant

  25. 1 T Coffee liqueur

  26. 1 Egg

  27. 1 Egg white

  28. 1 Oz Semisweet chocolate --

  29. 1 sq

  30. 1 T Vegetable oil

  31. BROWNIE:

  32. Melt chocolate squares and shortening over hot water, cool. Beat 2 whole

  33. 1 egg yolk and sugar on highest speed of electric mixer for minutes. Fold in chocolate mixture and remaining ingredients. Pour into 13 X 9 inch pan; chill for 30 minutes.

  34. CREAM CHEESE TOPPING:

  35. Combine cream cheese, icing sugar, instant coffee, liqueur, whole egg and the remaining egg white. Beat at lowest speed of electric mixer until well

  36. blended. Spread over batter in pan. Melt chocolate square and oil; cool to

  37. room temperature. Pipe chocolate in lines, 3/4 apart horizontally down

  38. length of pan. Using toothpick, start from bottom corner of pan and draw

  39. it back and forth at 1/2 intervals vertically to create "feather effect".

  40. 325F for 30 minutes or until cream cheese mixture is set. Cool.

  41. Cut into bars or squares. Store any leftover bars in refrigerator.
