  1. 2 cups 474ml Lentils - cooked

  2. 1 1/2 cups 219g / 7.7oz Peeled - seeded, chopped

  3. Tomatoes

  4. 1 cup 146g / 5.1oz Parsley - chopped

  5. 1/2 cup 55g / 1.9oz Celery - diced

  6. 1/2 cup 73g / 2.6oz Green pepper - chopped

  7. 1/2 cup 31g / 1.1oz Red onion - chopped

  8. 1/4 cup 36g / 1 1/3oz Mint - chopped

  9. 1/4 cup 59ml Lemon juice

  10. 1 tablespoon 15ml Olive oil

  11. 1 teaspoon 5ml Salt

  12. 1/4 teaspoon 1 1/3ml Pepper

  13. 1/8 teaspoon 0.6ml Garlic powder, cumin

  14. Lettuce leaves

  15. Mint leaves

  1. In large mixing bowl, combine all ingredients, except lettuce and mint leaves, mixing thoroughly.

  2. Chill.

  3. Serve on a bed of lettuce.

  4. Garnish with mint leaves if desired.
