  1. 2 tb Safflower oil

  2. 2 Garlic cloves; minced

  3. 1/4c Sliced shittake mushrooms

  4. 1/2c Zucchini, sliced

  5. 1/2c Eggplant, sliced

  6. 1/2c Yellow pepper, sliced

  7. 8 Scallions; finely chopped

  8. 1/4c Miso

  9. 1 c Vegetable stock

  10. 4 tb Fresh chopped parsley

  11. 1 lb Cooked linguine

  1. + Directions : In a large saucepan, heat oil over medium heat. Add veggies and garlic and saute for about 3 minutes. Transfer to bowl. Add miso. Slowly add stock while stirring well. Add parsley, veggies and pasta. Toss and serve. Add more liquid if too thick.
