  1. 1/4 cup butter or margarine, softened

  2. 1 tablespoon dry white wine

  3. 1/2 teaspoons minced garlic

  4. 1/2 teaspoon grated lemon peel

  5. 1/8 teaspoon black pepper

  6. 1/2 pounds red snapper, orange roughy or grouper fillets (about 4 to 5 ounces each)

  1. Preheat oven to 450°F. Combine butter, wine, garlic, lemon peel and pepper in small bowl; stir to blend.

  2. Place fish in foil-lined shallow baking pan. Top with seasoned butter. Bake 10 to 12 minutes or until fish begins to flake easily when tested with fork.
