  1. 3 tablespoons butter, melted

  2. 200g sugar

  3. 3 egg yolks

  4. 150g cake flour

  5. 1 teaspoon baking powder

  6. 1/4 teaspoon salt

  7. 1 teaspoon vanilla extract

  8. 1L milk

  9. 3 egg white

  10. 1 teaspoon cinnamon

  1. Preheat the oven to 190 C / Gas 5. Grease a 23cm pie dish.

  2. In a large bowl, mix together the butter and sugar until smooth. Add the egg yolks and beat until light and fluffy. Sift in the cake flour, baking powder and salt, and stir until well blended. Mix in the vanilla and milk. In a separate bowl, whip the egg whites to stiff peaks using an electric mixer. Fold into the batter. Pour into the prepared pie dish, and sprinkle cinnamon over the top.

  3. Bake for 25 minutes in the preheated oven, then reduce the temperature to 170 C / Gas 3. Continue to bake for 25 to 30 minutes, or until the centre is set when you gently jiggle the tart. Serve hot or cold.
