  1. 400g pork fillet

  2. 1 tsp Chinese cooking wine or sake

  3. 1/4 tsp salt

  4. 1/2 tsp pepper

  5. 1 dash sugar

  6. 1 1/2 tsp cornflour

  7. 1 large egg white

  8. 3 tbsp cornflour

  9. vegetable oil (for deep frying)

  10. 2 tbsp vegetable oil

  11. 150ml Blue Dragon Sweet Plum & Ginger Yaki Sauce

  12. 2 tbsp toasted sesame seeds

  13. 2 spring onions, chopped

  1. Wash and cut the pork into bite-size pieces.

  2. Combine Chinese cooking wine or sake, salt, pepper, sugar and 1 1/2 tsp cornflour and use to marinade the pork for at least 2 hours.

  3. Mix egg white and remaining cornflour and combine with the marinated pork to form a thin batter coating.

  4. Heat enough oil in a wok for deep-frying.

  5. Deep-fry the pork pieces until golden brown.

  6. Use a slotted spoon to remove the pork and drain off any excess oil.

  7. Heat 2 tbsp vegetable oil, add the Sweet Plum and Ginger Yaki Sauce and stir until runny.

  8. Add the fried pork pieces and mix well to coat.

  9. Serve immediately, garnished with spring onions and toasted sesame seeds.
