  1. 2 tbsp olive oil, divided.

  2. 1/2 lb fresh asparagus, cut into 1-1/2"-pieces. salt & pepper to taste.

  3. 2 ( 10") whole wheat tortillas, Can use white tortillas.

  4. 4 oz herbed soft goat cheese.

  5. 1/4 cup chopped fresh cilantro

  1. Heat 1 tbsp oil in skillet over medium-low heat. Cook asparagus, stirring occasionally until tender. Season w/ salt & pepper. Remove from heat. Spread 1 side of each tortilla w/ 1/2 the cheese. Place 1/2 the asparagus and 1/2 the cilantro over cheese. Fold tortilla in 1/2 over ingredients to form quesadillas. Brush the outside of quesadillas w/ remaining oil. Place quesadillas in skillet, over medium-low heat. Cook 3 min on each side or until lightly browned. Cut each quesadilla in 1/2.
