  5. 2 tb Corn-oil margarine

  6. 1/4 c Calorie-reduced mayonnaise

  7. 6 tb Unbleached flour

  8. 2 c Diced celery

  9. 1 1/4 c Defatted chicken stock

  10. 2 tb Chopped onion

  11. 1 c Non-fat milk

  12. 2 tb Freshly squeezed

  13. lemon juice

  14. 1/2 ts Salt

  15. 2 c Cooked cooled rice

  16. 1/8 ts Garlic powder

  17. 1/4 c Sliced almonds

  18. 1/8 ts Freshly ground black pepper - toasted in preheated

  19. c Cooked diced chicken - 350-

  20. without skin - 8

  21. Melt margarine in medium saucepan. Add flour and stir over medium heat

  22. 1 minute. Do not brown. Add chicken stock and milk. Using a wire whisk,

  23. stir over medium heat until mixture comes to a boil. Add salt, garlic

  24. powder and pepper; continue to cook 1 minute more.

  25. In large mixing bowl, combine sauce with chicken, mayonnaise, celery,

  26. onion, lemon juice and rice. Mix well and pour into a casserole sprayed

  27. with non-stick vegetable coating. Top with toasted almonds. Bake in

  28. 350-degree oven

  29. 50 to 60 minutes until hot and bubbly. Makes

  30. 7 cups OR 6 (1-cup) servings.
