  6. 1 12-inch pizza shell

  7. 8 oz Mozzarella cheese, shredded

  8. 4 oz Monterey jack cheese shredde

  9. 8 oz Ripe tomatoes, thinly sliced

  10. 4 Shrimp (16-20 size), split

  11. -& tossed in 1/4 c chile rub

  12. 2 tb Green scallion tops, thinly

  13. -sliced

  14. 1 ts Texas gremolata (garnish)

  15. MMMMM--CHILE RUB--

  16. 2 ts Garlic, finely chopped

  17. 1 tb Chile powder

  18. Juice from 1 lime

  19. 1/2 c Olive oil

  20. 1 tb Cilantro, finely chopped

  21. Salt & pepper to taste

  22. MMMMM--TEXAS GREMOLATA--

  23. 2 tb Lime zest, finely chopped

  24. 2 tb Garlic, finely chopped

  25. 1 c Cilantro, finely chopped

  26. Prepare Chile Rub: Combine all rub ingredients in a small mixing bowl

  27. until well blended. Toss the shrimp, using 1/4 cup per pizza. Yield:

  28. 3/4 cup (enough for 12 large split shrimp).

  29. Prepare Texas Gremolata: Combine all gremolata ingredients in a small

  30. mixing bowl. Use on top of pizzas, chile, pastas, or BBQ meats.

  31. Yield: 1 1/4 cup (use just 1 teaspoon per pizza).

  32. Assemble Pizza: Make up by layering the ingredients in order listed.

  33. 425'F for 15-20 minutes, or until crust is nicely browned.
