  1. 4 lbs 1816g / 64oz Country style pork ribs

  2. 1 teaspoon 5ml Salt

  3. 1 Lemon - thinly sliced

  4. 1 Onion - thinly sliced

  5. Grill Sauce

  6. 2 tablespoons 30ml Brown sugar - packed

  7. 1 tablespoon 15ml Salt

  8. 1/4 tablespoon 3.8ml Black pepper

  9. 2 1/4 tablespoons 33ml Chili powder

  10. 1 Garlic - mashed

  11. 1 tablespoon 15ml Lemon peel - grated

  12. 6 tablespoons 90ml Lemon juice

  13. 6 tablespoons 90ml Worcestershire sauce

  14. 2 1/4 cups 533ml Catsup

  1. Place ribs in large Dutch oven or kettle with enough boiling water to cover. Add 1 teaspoon salt, lemon and onion and cook 45 to 60 minutes.

  2. Meanwhile, to make sauce, combine brown sugar, 1 tablespoon salt, pepper, chili powder, garlic, lemon peel, lemon juice, Worcestershire, catsup and 3/4 cup water in saucepan. Bring to boil, reduce heat and simmer about 20 minutes, or until sauce is reduced to about 4 cups.

  3. Drain ribs thoroughly, discarding lemon and onion slices. Brush drained ribs well with sauce and place over slow coals. turn every 10 minutes, brushing frequently with sauce.

  4. Cook 35 to 45 minutes, or until done and well coated with sauce.

  5. Serve with extra sauce.
