  1. 1/2 cup packed brown sugar

  2. 1/2 cup white sugar

  3. 1 large egg

  4. 1/4 cup butter or 1/4 cup hard margarine , melted

  5. 1 1/2 cups eggnog

  6. 1 teaspoon rum or 1 teaspoon vanilla extract

  7. 3 cups all-purpose flour

  8. 1 tablespoon baking powder

  9. 1 teaspoon salt

  10. 1/2 teaspoon cinnamon

  11. 1/2 teaspoon nutmeg

  12. 2/3 cup chopped pecans or 2/3 cup walnuts

  13. 1 cup cut mixed glace fruit

  1. Beat sugar and egg in mixing bowl.

  2. Beat in melted butter.

  3. Add eggnog and extract. Mix.

  4. Sift flour, baking powder, salt, cinnamon and nutmeg over the eggnog mixture.

  5. Stir until moistened.

  6. Mix in nuts and fruit.

  7. Turn into greased 9x9x3 loaf pan.

  8. Bake at 350 degrees for about 1 hour until an inserted wooden pick comes out clean.

  9. Let stand for 20 minutes.

  10. Turn out onto rack to cool.

  11. Variations: Use measurements above.

  12. Pecan and Dried Cranberries.

  13. Pineapple and Coconut (drain pineapple).

  14. Walnut and Raisin (raisins soaked in Apricot brandy or any other fruity juice and then drained).
