    2. 210 g unsalted butter diced cold

    3. 210 g caster sugar

    4. 3 x 70gram Eggs

    5. 1 drop pure orange oil

    6. teaspoon Salt

    7. 320mm X

    8. 35mm loose based flan tin lined with Sweet Shortcrust pastry

    9. 18 x 70gram eggs

    10. 750 g caster sugar

    11. 9 fresh whole juicy Lemons

    12. 450 ml King Island Double cream

    13. 500 g caster sugar for caramelising

    14. sugar syrup

    15. Monin coconut syrup

    16. Coconut cream

    1. Shortcrust pastry Mix in sifted flour and sugar Mix in butter until mix looks sandy in texture Add eggs and orange oil Wrap and place in fridge till required.
