  1. 1 cup 160g / 5.6oz Uncooked long grain rice

  2. 4 tablespoons 60ml Oil

  3. 2 tablespoons 30ml Diced bell pepper

  4. 3 tablespoons 45ml Diced onion

  5. 1 teaspoon 5ml Dried parsley flakes

  6. 3 oz 85g Tomato paste

  7. 2 Garlic - minced

  8. 2 1/2 cups 592ml Cold water

  9. 3/4 teaspoon 3.8ml Salt

  1. Lightly brown rice in oil over medium heat, stirring constantly. Add bell pepper and onion and saute' five minutes more, stirring often. Remove from heat, add parsley, tomato paste and garlic. Stir well and then add water and salt. Heat mixture to boiling, cover tightly and simmer 20 to 30 minutes or until liquid is absorbed. Remove from heat and let steam 10 minutes before serving.
