  1. 2 large sweet potatoes , Peeled and diced

  2. 2 medium Granny Smith Apples , (or 3) cored and cut into bite-size pieces

  3. 1 tablespoon(s) brown sugar or splenda brown sugar , (heaping)

  4. 1 teaspoon(s) cinnamon , according to taste

  5. 2 tablespoon(s) butter , cubed

  6. 2 tablespoon(s) dried cranberries

  1. Place sweet potatoes, apples (leave the skin on) and cranberries in a flat glass casserole with a lid (about 2 quart). Add brown sugar and cinnamon. Toss with hands or spatula.

  2. Sprinkle cubed butter over the top.

  3. Place lid on dish and microwave on high 7-9 minutes. Stir mixture, and if sweet potatoes aren't quite soft, microwave 2 minutes more. IMPORTANT: Allow to sit for 2 minutes with the lid on before serving.
