  2. CAULIFLOWER SOUP (NORWAY)

  6. 5 1/2 c Cauliflower florets

  7. 2 c Water

  8. 1 t Salt

  9. 2 tb Margarine

  10. 1/2 c Diced onion

  11. 2 ts All-purpose flour

  12. 1 Pkt instant chicken broth

  13. -and seasoning mix

  14. 1 c Skim milk

  15. 1 d White pepper

  16. Ground nutmeg (Optional)

  17. In a 4-quart saucepan, combine cauliflower, water and salt; bring to a boil. Reduce heat and let simmer

  18. until cauliflower is tender; let cool slightly.

  19. Transfer 2 cups cauliflower (including cooking liquid)

  20. to blender container and process until smooth. Repeat

  21. procedure, 2 cups at a time, until all cauliflower and cooking liquid have been processed. Set aside. In

  22. same saucepan heat margarine over medium-high heat

  23. until bubbly and hot; add onion and saute until

  24. translucent. Sprinkle with flour and broth mix and stir quickly to combine; cook, stirring, for 1 minute.

  25. Gradually add milk and cook, stirring constantly,

  26. until flour mixture is completely dissolved and liquid

  27. thickens; stir in pureed cauliflower. Reduce heat and let simmer, stirring accasionally, until heated

  28. through; stir in pepper. Ladle into 4 soup bowls and,

  29. if desired, sprinkle each portion with dash nutmeg.
