  1. 1 pork tenderloin -- (8-ounce)

  2. 2 large ears fresh white corn

  3. 2 teaspoons olive oil

  4. 3 cups sliced green beans -- (1 pound) (2")

  5. 1/2 cup vertically sliced onion

  6. 1/2 teaspoon salt

  7. 1/8 teaspoon pepper

  8. 2 1/2 cups chopped seeded tomato

  9. 1 tablespoon chopped fresh basil

  10. 2 teaspoons white wine vinegar

  11. Cut whole kernels from ears of corn; set corn aside, and discard cobs.

  12. 7 minutes. Add corn, salt, and pepper; cook over medium heat

  13. 5 minutes, stirring occasionally. Remove from heat; stir in remaining ingredients. Yield:

  14. 5 servings (serving size: 1 cup).
