  1. 3 cups Rice Bubbles

  2. 1 cup desiccated coconut

  3. 60g butter, chopped

  4. 1 cup white marshmallows

  5. 1/2 cup white choc bits

  1. Combine Rice Bubbles and 1/2 cup coconut in a large bowl. Spread remaining coconut on a plate.

  2. Place butter and marshmallows in a small saucepan over low heat. Cook, stirring constantly, for 2 minutes or until melted and smooth. Pour over Rice Bubble mixture. Stir to combine. Allow to cool slightly. Stir in white choc bits. Allow to cool for 5 minutes or until slightly firm.

  3. Using damp hands, roll small spoonfuls of mixture into balls. Roll, 1 at a time, in coconut.
