  1. 6 Peaches, ripe

  2. 1 Lemon

  3. 1/2c Water

  4. 1/2c Granulated Sugar

  5. 10 Mint Leaves

  6. 1/2pt Raspberries, fresh

  1. + Directions : Peel peaches and cut each in 8 segments, discarding pits. Cut julienne strips of the lemon peel and squeeze juice into a medium, heavy saucepan. Add water, stir in sugar, and add lemon peel, 6 of the mint leaves, and the peaches. Bring mixture to a boil, then simmer gently for about 10 minutes. Cool mixture. Remove peaches from poaching liquid with slotted spoon and divide among 4 serving dishes. Top with raspberries and decorate with mint. Serves 4.
