  1. 1 box (20 1/2 oz) whole-grain apple-cinnamon muffin mix

  2. 2 large eggs

  3. 3 medium Granny Smith or Gala apples, peeled, cored and cut in 1/4-in.-thick slices

  1. Heat oven to 375ºF. Coat a 9-in. springform pan with nonstick cooking spray. Prepare muffin mix as package directs, using 2 eggs, 1⁄2 cup water and 1⁄4 cup oil. Gently stir in 1 sliced apple with the provided apple-cinnamon pouch. Spread into pan.

  2. Arrange remaining apple slices in concentric circles on top. Sprinkle 3 Tbsp sugar, then the granola topping on top.

  3. Bake 55 minutes or until wooden pick inserted in center comes out clean. Variations: Sprinkle 1⁄4 cup chopped walnuts on top along with the granola. Use 3 pears, peeled, cored and sliced, instead of apples. Stir 2 tsp grated lemon zest into batter.
