  1. 1 large eggplant

  2. 1 small onion, chopped

  3. salt and pepper

  4. 1/4 cup olive oil

  5. 1 1/2 Tbsp. vinegar

  6. fresh parsley, chopped

  7. t omato wedges

  8. black Greek olives

  1. B ake eggplant at 350 for 1 hour or until soft.

  2. Remove skin and chop fine. Combine eggplant, onion, salt, pepper, olive oil and vinegar. Mix well.

  3. Garnish with parsley, tomato and olives.
