  2. HEARTY VEGETABLE BARLEY SOUP

  6. 1/2 lb Lean ground beef

  7. 1/2 c Chopped onion

  8. 2 Garlic cloves -- minced

  9. 7 c Water

  10. 16 oz No-salt-added tomatoes

  11. -- undrained, chopped

  12. 1/2 c Medium QUAKER Barley*

  13. 1/2 c Sliced celery

  14. 1/2 c Sliced carrots

  15. 2 Beef bouillon cubes

  16. 1 t Basil

  17. 1 Bay leaf

  18. 1/4 ts Black pepper

  19. 9 oz Frozen mixed vegetables

  20. In 4-quart saucepan or Dutch oven, brown ground beef.

  21. Add onion and garlic. Cook until onion is tender;

  22. drain. Add remaining ingredients except frozen

  23. vegetables. Bring to a boil. Reduce heat to low;

  24. cover. Simmer 40 minutes, stirring occasionally. Add

  25. 10 to 15 minutes or until

  26. vegetables and barley are tender. Add additional

  27. water if soup becomes too thick upon standing. Ten

  28. 1-cup servings *NOTE: To use Quick QUAKER Barley,

  29. substitute 2/3 cup quick barley for medium barley and decrease water to 6 cups. Cook ground beef, onion and garlic as directed above. Add remaining ingredients

  30. including frozen vegetables. Bring to a boil. Reduce

  31. 15 to 20 minutes or until
