  1. 1 lb Ground Chicken or Turkey

  2. 2 Eggs , beaten

  3. 2 oz Crushed Whole Grain Cereal Like Kashi Golean or Fiber One , or subst.

  4. 1/3 c. uncooked instant rice

  5. 2" Piece Fresh Ginger

  6. 3 cloves Garlic

  7. 1 tsp Red Chilli Paste or More , to taste

  8. 3 tsp Water

  9. Optional Gravy:

  10. 15 oz. can Regular or Lite Coconut Milk

  11. 1 can Campbell's Condensed Cream of Mushroom Soup

  12. 1 can Low Sodium Chicken or Turkey Broth

  13. 2 tsp Lime Juice

  14. Chopped Green Onion , for garnish

  1. Preheat oven to 350 F. Mix water with cereal, add to blender. Drop in ginger, garlic, & chilli paste. Grind finely.

  2. Add ground mixture to meat. Mix well with hands.

  3. For loaf:

  4. Grease a 9 x 5 in. loaf pan with canola oil. Pour mixture into pan. Bake one hour or until slightly brown on top & done through.

  5. For balls:

  6. Grease a wide glass pan generously with canola oil. Oil hands. Make 9-12 balls or 3 large ones with hands. Place evenly spaced on dish. Cook 50 min. or until nicely browned & cooked through.

  7. Gravy:

  8. While meat cooks,in a deep saucepan, mix coconut milk, condensed soup, & poultry broth. Cook on medium heat 10-20 min. or until it reaches desired consistency. Turn off heat. Stir in lime juice.

  9. To serve: Place 1/3 the meatballs or meatloaf on each serving plate. Pour sauce over top. Garnish with chopped green onions, if using. Extra gravy is good over rice or steamed veggies.
