  2. SAVORY BEEF STEW

  6. 1/4 c Oil

  7. 2 Parsnips, diced

  8. 2 Stalks celery, diced

  9. 1 Onion chopped

  10. 1 28 oz can crushed tomatoes

  11. 3/4 c Beef broth

  12. 1/2 ts Thyme, crushed

  13. 1/4 ts Salt

  14. 2 lb Chuck stew meat

  15. 2 Turnips, dices

  16. 1 Carrot, diced

  17. 2 Cloves garlic, minced

  18. 3/4 c Red wine

  19. 1/4 ts Rosemary, crushed

  20. 1 10 oz pkg frozen succotash

  21. 1/8 ts Pepper

  22. In a large saucepan, heat oil over medium high

  23. heat. Coat the beef chunks with flour then add to the

  24. oil and cook, turning, until browned. Remove and set

  25. 6 ingredients to saucepan; saute

  26. minutes. Return beef to saucepan. Add tomatoes, and next 5 ingredients. Bring to a boil. Reduce heat

  27. cover and simmer until meat is tender, about 45

  28. minutes. Add succotash, salt and pepper. Cook until

  29. heated through.

  30. Serve over rice or noodles.
