  1. 4 chicken breasts -- skin removed

  2. 1/2 Cup lemon juice

  3. 1 Tsp lemon peel -- finely grated

  4. 2 Tbsp honey

  5. 2 Tbsp vegetable oil

  6. 2 Tbsp fresh rosemary leaves -- chopped

  7. 1 Lb. baby red potatoes -- (8)

  8. 1 Lb. carrots -- (8) peeled

  1. Preparation : Parboil potatoes and carrots (about 5 minutes). Rinse in cool water, drain and set aside. Marinate chicken in rest of ingredients for 30 minutes to serveral hours. Cover and bake at 375 for 30 minutes. Remove cover , add potatoes and carrots, and bake for another 20 minutes.
