  5. 1/2 c Butter or margarine

  6. 1 c Sugar

  7. 1 ts Ground cinnamon

  8. 1/2 ts Baking soda

  9. 1/4 c Molasses

  10. 1 Egg

  11. 2 1/4 c All-purpose flour

  12. 3 Eggs yolks; slightly beaten

  13. 1 ts Lemon peel; finely shredded

  14. 1/4 c Lemon juice

  15. 1 c Flake coconut

  16. Melted candy coating (opt'l)

  17. Beat butter or margarine in a mixing bowl with an electric mixer on

  18. 30 seconds. Add

  19. 1 cup sugar, cinnamon, baking soda, and 1/4 tsp. salt; beat till combined. Beat in molasses and eggs till

  20. combined. (Use either unsulfured or sulfured molasses in recipes calling

  21. for molasses. Unsulfured molasses has a lighter sugarcane flavor than

  22. sulfured molasses, which is produced when sulfur is used in processing).

  23. Beat in as much flour as you can. Stir in remaining flour. Divide dough

  24. in half; cover and chill till easy to handle.

  25. Meanwhile, for filling, combine the egg yolks, lemon juice, 1/8 tsp.

  26. salt, and 1 tbsp. water in a small saucepan. Cook and stir over medium heat

  27. till thickened and bubbly. Cook and stir 1 minute more.

  28. Stir in coconut and lemon peel. Cool.

  29. Roll each portion of dough on a lightly floured surface into a

  30. 15x6-inch rectangle. Spread one fourth of the filling in a 1-inch-wide

  31. strip lengthwise down center of each rectangle. Fold each long side of

  32. dough over filing, overlapping slightly in center; seal. Place seam-side

  33. down on working surface.

  34. Flatten slightly.

  35. 1 1/2-inch bars. Place bars

  36. 1 1/2 inch apart on

  37. 12 minutes or till

  38. set. Cool cookies on wire racks. If desired, drizzle with melted candy
