  1. 3/4 Cup honey

  2. 1/2 Cup sugar two thirds cup fresh brewed strong coffee

  3. 3 eggs -- separated

  4. 1/2 Cup cake meal

  5. 1/2 half cup potato starch

  6. 1/2 half tsp. cinnamon

  7. 1/4 Tsp. ground ginger

  8. 1/2 Cup chopped walnuts

  1. Preparation : In a large bowl combine the honey, sugar, coffee and egg yolks and mix until well blended. In a smaller bowl, sift together the meal, starch, cinnamon and sugar. Combine the contents of both bowls, add the nuts and mix well. Beat the egg whites until stiff but not dry. Gently fold the beaten whites into the batter and pour the mixture into a well greased 5 x 9 inch loaf pan. Bake in a pre-heated 350degree(s) oven for about 45 minutes or until a tester comes out clean
