  1. 1 cup(s) chopped fresh parsley

  2. 1/4 cup(s) olive oil

  3. 2 tablespoon(s) lemon juice

  4. Salt and black pepper

  5. 4 (about 4 ounces each) salmon steaks , about 3/4 inches thick

  1. Preheat oven to 400 degrees F. In blender or in food processor, with knife blade attached, puree parsley, oil, lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper until smooth.

  2. Coat salmon steaks with parsley mixture. In oven-safe 10-inch skillet over high heat, cook salmon until lightly browned on both sides, about 2 minutes.

  3. Place skillet in oven. Roast salmon until just opaque throughout, 8 to 10 minutes.
