  1. 2 Tomatoes

  2. 3 cups 480g / 16oz White or brown rice - cooked

  3. Dressing

  4. 1/3 cup 78ml Olive oil

  5. 1/4 cup 59ml Wine vinegar

  6. 1 Lemon - juice of

  7. 1/4 cup 36g / 1 1/3oz Parsley - chopped

  8. Salt

  9. Pepper

  1. Roast the tomatoes over the high flame of a gas range or a broiler.

  2. Turn every 20 seconds, so skins blister evenly.

  3. Peel by running under cold water and rubbing with your fingers.

  4. Chop the tomatoes coarsely and toss with warm rice.

  5. Mix the dressing ingredients together and toss with the rice and tomatoes.

  6. Season with salt and pepper to taste.
