  1. 2 Halibut filets - (6 to 8 oz ea)

  2. 2 tablespoons 30ml Butter

  3. 2 teaspoons 10ml Chopped fresh parsley

  4. 1/2 Red onion - finely sliced

  5. 1 Zucchini - finely sliced

  6. 1 Yellow squash - finely sliced

  7. 1 Tomato - quartered (large)

  8. Salt - to taste

  9. Freshly-ground black pepper - to taste

  10. 2 Parchment paper - (12" square ea)

  1. Preheat oven to 375 degrees.

  2. Toss together the parsley, red onion, zucchini, yellow squash, tomato and salt and pepper. Place each halibut filet on a piece of parchment paper and top with vegetable mixture. Place 1 tablespoon of butter on top of each.

  3. Fold halibut in parchment paper and roll edges to seal. Place on a sheet pan and cook for 20 to 25 minutes.

  4. This recipe yields 2 servings.
