  1. 1 1/4 cups all-purpose flour

  2. 3/4 cup sugar

  3. 1/2 cup chopped pecans

  4. 1/4 cup quick cooked oats -- uncooked

  5. 1 1/2 teaspoons baking powder

  6. 1/2 teaspoon salt

  7. 3/4 teaspoon cinnamon

  8. 1/2 teaspoon ginger

  9. 1/2 teaspoon nutmeg

  10. 2 eggs

  11. 1 medium zucchini -- finely shredded

  12. 3/4 cup salad oil

  13. Prepare 12 muffin cups.

  14. In large bowl mix flour, sugar, nuts, oats, baking powder, salt & spices.

  15. In separate bowl beat eggs with fork; stir in zucchini and oil.

  16. Pour egg mixture all at once into flour mixture; stir just till moistened. (Batter will be lumpy)

  19. 1 tablespoon cinnamon and 1/2 cup of sugar.
