  1. 2 1/2 C yellow cornmeal

  2. 1 C white flour

  3. 2 Tb sugar

  4. 1/2 Tb salt

  5. 3 egg s

  6. 1 1/2 C buttermilk

  7. 1/2 C oil

  8. 1 can (14 oz) cream corn

  9. 1 can (14 oz) green chile s

  10. 1/3 C chopped green onion

  11. 2 C cheddar cheese

  1. Preheat oven to 425*F. In a large bowl, combine cornmeal, flour, sugar, and salt; mix well. In a separate bowl, beat 3 eggs, then mix into the flour mixture. Add buttermilk and oil. When well blended, add corn, chiles, onion, and cheese. Pour batter into pan(s) of choice. Bake at time found below: Pan Type & Times Iron skillet - 25 minutes 2 9x11" pans - 40 minutes 3 8x10" pans - 30 minutes
