  1. For the meat mixture:

  2. 1 lb. ground beef

  3. 1 medium onion sliced

  4. 8 ounces mushrooms sliced

  5. 4 cups frozen mixed vegetables

  6. one cup of any wine or beef stock

  7. 1 tablespoon dried tarragon

  8. 1 teaspoon salt

  9. 1/2 teaspoon cracked pepper

  10. 3 tablespoons flour

  11. 2 cups milk **

  12. For the mashed potatoes:

  13. 2 2/3 cup water

  14. 5 tablespoons butter

  15. 1 cup milk

  16. 1/2 teaspoon salt

  17. 1/2 teaspoon garlic powder

  18. 2 2/3 cups instant potato flakes

  19. 1/2 cup sour cream

  20. 2 egg yolks beaten

  21. 2 cups cheddar cheese shredded

  2. In large skillet combine ground beef, onion, mushrooms, frozen vegetables, tarragon, salt, pepper, garlic powder and the wine or beef stock. Cook until beef is cooked through and the vegetables are tender. Add flour and milk and cook until meat mixture has thickened. Pour mixture into a greased 9x13 casserole dish and top with potatoes.

  3. For potatoes:

  4. In medium sauce pan, combine water, butter, salt, garlic powder, pepper, two cups of milk and heat to simmer. Take off heat and add the potato flakes and mix well. Add the sour cream, mix again and then add the two egg yolks and mix again. Add the two cups of cheese and mix well. Top the meat mixture with the potatoes making sure to spread potatoes over the whole top of the casserole. May sprinkle with paprika if desired. Place in 400 degree oven for 30 minutes until bubbly and slightly golden on top. Yield: serves 6 Notes: This is just plain amazing comfort food! A complete meal in just one dish.
