  1. 1 1/4 cups 296ml Plain yogurt

  2. 4 Green onions - sliced

  3. 1/2 teaspoon 2 1/2ml Curry powder - (to 1)

  4. 2 lbs 908g / 32oz Red potatoes - peeled, and Cut into eighths

  5. 1/4 cup 59ml Milk

  6. Salt - to taste

  7. Freshly-ground black pepper - to taste

  8. Chopped fresh parsley

  1. Combine yogurt, green onions and curry powder in bowl.

  2. Place potatoes in microwave-safe dish. Add milk. Cover tightly and cook on High until potatoes are tender but not mushy, about 12 minutes. Remove from microwave.

  3. Add yogurt mixture to potatoes and mash roughly. Season with salt and pepper. Garnish with parsley.

  4. This recipe yields 4 servings.
