  1. 8 1/2 cups all purpose flour

  2. 8 1/2 cups sugar

  3. 4 1/4 cups unsweetened cocoa powder

  4. 2 3/4 Tbs. baking powder

  5. 1 1/2 Tbs. salt

  6. 2 cups unsalted butter -- softened

  7. 17 large eggs -- lightly beaten wax paper

  1. Preparation : Preheat oven to 400 F. Combine first 5 ingredients in a bowl. Using your fingers, blend in butter until incororated. Stir in egg until mixture is well combined. Cover dough in bowl and chill 1 hour, until firm. Spoon level tablespoonsof dough onto wax paper and cut in half. With floured hands, roll eachpiece into aball. Arrange balls on alightly greased baking sheet. Flatten each ballwith a floured metal spatula into a disk about 2 inch in diameter. Bake 7-8 minutes in middle of oven, or until cookies are set but not hard. Cool on racks. Cookies will continue to crisp as they cool. Because this recipe is for a particular size pan, it adjusts the number of servings only in multiples of 6.The instructions describe how to prepare the ingredients for one pan.
