  1. 2 cups Light brown sugar

  2. 1 1/2 cup Sultanas (golden raisins)

  3. 2 teaspoons Dry mustard (Coleman's)

  4. 2 pounds Tart apples, chopped

  5. cup Fresh peppermint, chopped

  6. cup Whiskey

  7. 1 teaspoon Salt

  8. teaspoon Each: mace, allspice

  9. teaspoon Ground clove

  1. NOTE: This one also works with pears replacing apples.

  2. GENERAL INSTRUCTIONS: Combine all ingredients in a stainless steel pot.

  3. Bring to a boil uncovered. Then lower to a simmer and cover for for the remaining cooking time: about 1 hour. The mixture should be thick like a good finished jam or marmalade.
